Creamy Sun-dried Tomato Pesto Pasta

You will need:

  • Whole wheat pasta, about 2 cups (I used penne and rotini because I had a bit of each)
  •  Sun dried tomatoes, about 5  (I don’t use the ones packed in oil, but I don’t see why you couldn’t.)
  •  Bunch of fresh basil
  •  Tbsp. of pine nuts
  • Olive oil
  • 2 cloves fresh garlic
  • Milk/Rice milk/Cream..whatever works for you!
  •  Chopped green onions, if desired
  • Mushrooms, about 3

Recipe can easily feed at least 2 people!


Put water for pasta on to boil and salt water according to your tastes. Add pasta when water comes to a boil.

 In a food processor combine basil, sun dried tomatoes, fresh garlic, and pine nuts. Process while slowly adding in olive oil. You don’t want this to be too loose, so stop processing when the mixture becomes a bit of a paste.

Slice your mushrooms thinly and heat olive oil in a pan on medium. Brown your mushrooms to your desired doneness, and then add the mixture from your food processor. Turn down your heat and sautee gently for about a minute. Add in the milk product of your choice slowly, stirring each time you add. You’ll notice that there is no set amount of milk. That’s because you  need to add as much or as little as you want to make the sauce the way you desire it. Some people like thin sauce, some people like thick. So whatever you like goes!

Simmer the sauce to your desired thickness and add salt and freshly ground pepper to taste. Drain your pasta and add to the sauce, tossing. Place your pasta in a bowl and sprinkle with chopped green onions. Devour. 🙂
